Paul Traver and Bob Morris are the two brewers and owners behind Great Black Swamp Brewing Co. in Toledo. Great Black Swamp -- one of two breweries in Ohio that uses a frog in its logo -- opened in late 2010. The production brewery makes draft beer only that's available throughout the Toledo area.
Question: Why did you become a brewer?
Answer: It was something that my homebrewing friends and I always talked about when we first started getting serious. After that I was lucky enough to get a job at a homebrew store and then a couple friends went on to become assistant brewers and once I got to see everything first hand I was hooked.
Q: What sets Great Black Swamp Brewing Co. apart in the crowded beer industry?
A: Right now it's the fact that we are a local brewery that developed its beers with Toledo in mind. Early on, we made the decision that we wanted to be a brewery that served the Toledo area so we decided to be draft only brewery and try and get people out and drinking a Toledo-made beer and in order to make that work we realized that our beers had to represent our area and still be good quality craft beers.
Q: Everyone must assume being a brewer is a great job - you get to work with beer. What would surprise people who did your job for a day?
A: How little brewing there is in an average week and how much cleaning there is. We always seem to have kegs that are in some state of being cleaned and when it's not that it's tanks or the rest of the brewery.
Q: What’s your favorite beer that you brew and why?
A: Outside of our seasonal beers my favorite is our Wild Duck IPA. I've always been a hop head so while I really like the balance of the Mosquito Red, when it's finally time to put my feet up and relax it's the Wild Duck that I go for.
Q: Which beer – any beer in the world – do you wish that you created/invented/brewed and why?
A: Bridge Port IPA. There is a balance to the malt and hops that is just incredible. It's a beer that as a homebrewer I tried over and over again to emulate and it really formed a lot of the basis for the way I brew a lot of our beers.
