2 cups granulated sugar
1½ cups almond paste
½ cup raw egg whites
Confectioners’ sugar, for dusting
Preheat oven to 350 degrees.
Break up almond paste into small chunks and put into a food processor, add granulated sugar. Grind mixture together until there are no chunks of paste larger than ⅛ inch.
Place the mixture in a stand mixer bowl, and using the paddle attachment at medium speed, add egg whites slowly. Make sure you incorporate each addition completely.
Once all of the egg whites are added, scrape bowl with rubber spatula.
Mix on medium speed for 1 to 2 minutes.
Place mixture in a pastry bag fitted with a star tip. Press out cookies that are about 1 to 1½ inches in diameter onto parchment-lined cookie trays.
Bake for 15 to 18 minutes. Cookies should be golden brown on edges and a little on top.
After cookies are cool, dust with confectioners’ sugar.
Makes 2 to 3 dozen.
