Muscovado is a raw sugar

Q.: What is Muscovado sugar? I have a cookie recipe that calls for it.

A.: Muscovado sugar, which is sometimes called Barbados sugar, is an unrefined brown sugar which is moist and has a strong molasses flavor. It comes from sugar cane juice and is commonly used for making rum, but also is used in baking.

Because it is considered a raw sugar, you may have the best luck finding it at natural, organic or health food grocery stores. If you can’t find it, replace it cup for cup with dark brown sugar.
