There’s probably no cookie that is more associated with Akron than the oatmeal cookies prepared at Quaker Square. For a time, the recipe was reprinted on postcards available at Quaker Square.
QUAKER SQUARE OATMEAL COOKIES
¾ cup vegetable shortening
1 cup firmly packed brown sugar
½ cup granulated sugar
¼ cup water
1 tsp. vanilla
½ tsp. baking soda
3 cups uncooked oats
1 cup flour
1 tsp. salt
Beat together shortening, sugars, egg, water and vanilla until creamy. In another bowl, combine baking soda, oats, flour and salt and mix well. Add to wet ingredients and stir well.
Drop by rounded teaspoons onto greased cookie sheet.
Bake at 350 degrees for 12 to 15 minutes.
Makes about 5 dozen small or 3 dozen large cookies.
