Mouth waters at 'Wine Bar Food'

The subtitle of Wine Bar Food by Cathy and Tony Mantuano (Clarkson Potter, $27.50) says it all: ''Mediterranean Flavors to Crave with Wines to Match.'' Authors Tony Mantuano, chef-partner at Chicago's Spiaggia restaurant, and his wife, Cathy, cover the region from Portugal to Greece, presenting small plates and nibbles to match with wines of each country.

The Mantuanos take a relaxed and encouraging approach to their recipes and their favorite wines, both of which are grouped by country. Italian food is particularly well-represented here. Full-color photography is mouthwatering.

Some of the recipes may be beyond the skill or stomach of the average cook. Focus on the whipped feta and roasted red pepper spread, the braised chicken with olives and orange, salt cod fritters with aioli or the pasta with spinach, pecorino Romano and black pepper.

Particularly valuable are the sections on gourmet canned and bottled products to round out the menu, and a glossary of cheeses. The wine essays deliver the info you need to order wisely.
