A few years ago, New York baker Jim Lahey gave us a method for no-knead artisan loaves in his My Bread book. Calling for much less hands-on work than other recipes, it was a game-changer in the world of bread baking.
The new book My Pizza: The Easy No-Knead Way to Make Spectacular Pizza at Home, by Lahey with Rick Flaste (Clarkson Potter, 192 pages, $27.50), translates a similar technique to pies. And while the dough may be the draw, we were also seduced by the vast array of toppings, like shiitake with walnut puree, and spicy eggplant.
