Kitchen Scoop: Social media query yields delicious recipe idea

I saw the plea on my Facebook news feed: “Anyone know how to make really good apple-cinnamon oatmeal without using the instant stuff?”

I wanted to respond, but when I’m making my morning oatmeal, I never measure my ingredients; I do it by taste and routine. So I didn’t have a real recipe to share at that moment. But on a recent morning, I measured carefully as I stirred up a pot full of oats and apples, so I could share it with you all.

To make four servings of Apple Pie Oatmeal, it is easier to cook on the stovetop. If, however, you are making just one serving, the microwave wins top honors. I have included amounts and directions for both ways.

I use more than just cinnamon to spice it up. In addition to brown sugar, I use apple pie spice, a store-bought blend of all kinds of “apple” spices. This way, you are not going through the whole spice cabinet to add flavor.

Check out this delicious fall recipe full of oats and apples. When my cousin and her two children (ages 8 and 10) visited, they helped us devour the whole pot. So not only is it easy, it is kid-friendly and approved. Let me know what you think!

Apple Pie Oatmeal

1 tbsp. butter

2 medium apples, peeled, cored and diced

3 cups unsweetened apple juice or water

1 tbsp. brown sugar

1 tsp. apple pie spice

¼ tsp. salt, optional

1½ cups whole oats (old-fashioned, not quick or instant)

1 tbsp. half-and-half

In medium saucepan, melt butter over medium heat and add apples. Saute 2 minutes, until apple pieces begin to soften. Add juice (or water if using), brown sugar, apple pie spice and salt if desired and bring to a boil; stir in oats.

Return to a boil; reduce heat to medium-low. Cook 5 minutes or until most of juice is absorbed, stirring occasionally. Let stand until desired consistency is reached and cool slightly before serving. Add half-and-half just before serving. Makes four generous servings; leftovers are delicious.

For a single microwave serving: In 2-cup microwaveable bowl, combine ¾ tsp. butter; ½ medium apple, peeled, cored and diced; ⅔ cup unsweetened apple juice or water; ¾ tsp. brown sugar; ¼ tsp. apple pie spice; pinch salt; and ⅓ cup whole (old-fashioned) oats. Microwave on high 4 to 5 minutes or until most of juice is absorbed. Watch carefully to prevent over-spillage. Let stand to cool and achieve desired consistency. Add 1 tsp. half-and-half just before serving.

Each serving has about 331 calories, 6 grams fat (2.7 grams saturated), 9 milligrams cholesterol, 5.3 grams protein, 64 grams carbohydrates, 6 grams dietary fiber, 177 milligrams sodium.
