Many cooks have grown up with the red-cover Betty Crocker Cookbook, and swear by their favorite edition no matter how many updates are released.
I’ve seen some from the 1950s and ’60s still hard at work in kitchens, despite being held together with duct tape.
But the new Box Tops for Education Special Edition may appeal to home cooks, particularly those with school-aged children.
It contains a new first chapter explaining the program and offering a collection of family baking favorites using products that guarantee some box tops from Betty Crocker brands. Organizations collect the box tops to trade in for cash for schools, and the book also contains 10 bonus box tops.
After the first chapter, the book is the newest edition of the classic red cover, filled with pages of worthwhile advice and information for the home cook. And there are plenty of recipes like this one for beef short ribs, which is an ideal dinner for October when we don’t mind turning on the oven.
BEEF SHORT RIBS CARBONNADE
3 tbsp. vegetable oil
4 lbs. beef short ribs
2 large onions, sliced
3 tbsp. all-purpose flour
1 can (14 oz.) beef broth
1 tsp. balsamic vinegar
1 tbsp. packed brown sugar
1 tsp. dried thyme leaves
1 tsp. salt
¼ tsp. pepper
1 can or bottle (12 oz.) beer or non-alcoholic beer
Heat oven to 325 degrees. In a 12-inch skillet, heat 1 tablespoon of the oil over high heat. Cook ribs in oil about 10 minutes, turning frequently, until brown on all sides. Discard drippings. Place ribs in large roasting pan. Cover and bake 1 hour.
Meanwhile, in same skillet, heat remaining 2 tablespoons oil over medium-high heat. Cook onions in oil 10 to 15 minutes, stirring frequently, until tender and brown. Stir in flour, coating well. Stir in broth, vinegar, sugar, thyme, salt and pepper.
Drain drippings from roasting pan. Pour onion mixture over ribs. Add beer. Cover; bake about 1 hour 30 minutes longer or until ribs are tender. Serve ribs with pan juices.
Serve with mashed potatoes.
