The mother-daughters team of Rita Benya, Jean Seay and Karen Miller closed their Norton bakery, Hunky Dory, in December 2000 to make way for a hospital expansion project. The following Christmas, they agreed to share some of their most popular cookie recipes with Beacon Journal readers.

DATE-COCONUT BALLS

1/2 cup margarine

1 cup sugar

1 egg, slightly beaten

1 cup chopped dates

2 cups crisped rice cereal

1/2 cup ground walnuts

1/2 tsp. vanilla

Flaked coconut

Combine margarine, sugar, egg and dates in a saucepan. Cook over medium heat for 10 minutes. Stir, then set aside to cool. Stir in cereal, walnuts and vanilla. Form into walnut-size balls. Roll in coconut. Store in refrigerator overnight.

Makes 2 to 3 dozen balls.
