This is one of the first cookies I ever baked by myself. I used to make these cookies when I worked at Intimate Affair Catering. To this day, it is one of the best chocolate chip cookies I have ever made. This is my go-to recipe for any holiday cookie exchange.

INTIMATE AFFAIR CHOCOLATE CHIP COOKIES

1¼ cup Quaker Oats (old-fashioned), lightly processed in a food processor

1 cup all-purpose flour

¼ tsp. salt

½ tsp. baking soda

½ tsp. baking powder

1 stick unsalted butter, softened

½ cup white sugar

½ cup light brown sugar

1 large egg, at room temperature

½ tsp. best-quality vanilla

2 oz. good-quality milk chocolate, grated

1 cup semi-sweet chocolate chips

Preheat oven to 375 degrees.

In a medium bowl, stir together the oats, flour, salt, baking soda and baking powder.

In a large bowl, with a hand mixer, cream the butter. Add the white sugar and brown sugar until combined. Beat in the vanilla and egg. Using a wooden spoon, mix in the dry ingredients, grated chocolate and chocolate chips.

Using a tablespoon, make 1-inch balls of dough. Place the balls on a cookie sheet about 2 inches apart and bake approximately 10 minutes. The cookies should be light brown and should have puffed up. Remove the cookies to a rack to cool.

Makes about 2 dozen.
