FRUIT BARS

1/2 cup vegetable shortening

1 1/4 cups sugar

1 egg

1 tsp. vanilla extract

2 1/4 cups sifted cake flour

1 tsp. baking soda

1/2 tsp. salt

1 tsp. cinnamon

1 tsp. allspice

1 cup yellow cake crumbs

1/4 cup molasses

1/4 cup water

1 1/2 cup raisins

Powdered sugar glaze (recipe follows)

Preheat oven to 350 degrees. Grease and flour cookie sheets.

Cream shortening and sugar together until light and fluffy. Beat in egg and vanilla.

Sift flour, baking soda, salt, cinnamon and allspice together.

Add dry ingredients, cake crumbs, molasses and water to creamed mixture and beat until smooth. Beat in raisins.

Take a piece of dough the size of a tennis ball and roll it out on a floured surface like a sausage to about 8 inches in length. Repeat with remaining dough, placing the rolls about 3 inches apart on cookie sheets. Press rolls down to flatten into bars. Bake for 20 to 25 minutes. Do not overbake.

Remove from oven. With a knife, smooth icing over strips.

Immediately slice each roll into 3 individual bars with a pizza cutter or sharp knife. Cool for 5 to 10 minutes, then place on a wire rack.

Makes about 2 dozen.

POWDERED SUGAR GLAZE

1 cup sifted powdered sugar

2 tbsp. water

Place sifted powdered sugar in a bowl. Add water and beat until smooth. Add more water if needed to make a runny icing.
