The Firehouse Grill is becoming the Firehouse Grill Brewery.
The Blue Ash restaurant announced Thursday that it's adding a seven-barrel brewery this fall. Dan Shatto, who served as an assistant brewer at the same site years ago when the restaurant operated as Watson Brothers Bistro & Brewery, will oversee the brewing.
“Firehouse Grill steps forward into the future while also stepping back in history," Shatto said in a news release. "This building was known as a staple brewery in Blue Ash.”
Watson Brothers occupied the space from 1996 to 2006. Shatto worked there from 2003 to 2006. He has worked for the last five years at MadTree Brewing Co. in Cincinnati.
The Firehouse Grill Brewery plans to produce three staple house beers along with rotating brews. Shatto is designing the Firehouse Grill beers now. The brewing equipment will be located in what is now the Firelight Room. There are no plans to distribute beer beyond the brewpub, which will continue to offer a full wine list, cocktails and hard seltzers.
The restaurant now sports "Brewery Coming Soon" signs.
“For years, customers have curiously asked if we would bring back the brewery that was once so well-known at this location,” owners Bob and Molly Davis said in a prepared statement. “We feel the time is right to be true to our roots."
