UnHitched Brewing Co. is almost ready for its public debut.

The Louisville brewpub — located in the former eight-lane Louisville Bowl Restaurant & Bar at 115 S. Mill St. downtown — will host its grand opening Oct. 25.

"People in Louisville and the surrounding area have been looking for a spark to provide some energy downtown," co-founder Adam Longacre said Wednesday. "We're anxious to get open and showcase the effort and detail that we’ve put into this."

It will be a big weekend for the Stark County community. ArtsinStark is holding a big Halloween Fest in Louisville on Oct. 26.

The five-barrel brewpub is brewing its first beer today (Sept. 11) and it's a hybrid saison called UnConventional Wisdom. Unhitched hasn't set its opening day beer lineup yet, but Longacre said in addition to the saison, it will be some variation of the following beers:

• Uncommon Common, a Midwestern common

• Roofers Delight, a kolsch

• Well Attenuated #1, a West Coast IPA

• Level Out, an American stout

• Unearthed, a juicy red ale

• The Lou, a hazy IPA

• Squeak, a gose

• Emmersion, an American wheat using Ohio-grown mmer Wheat

• Unfailing, an Oktoberfest

• Cone Prone, a harvest pale ale

• Louisville Lager, a pilsner

• Shrouded, a dark saison

• The Alley, a table beer

• Unfading, a porter

UnHitched is using malt from West Branch Malts in Brunswick.

Longacre, who runs a technology consulting business in Louisville, is launching the brewery along with Ben Biery of Biery Cheese fame and George Kiko of Kiko Auctions fame. The brewmaster is Garret Conley.

The regular hours will be: 3 to 9 p.m. Wednesday; 3 to 10 p.m. Thursday and Friday; 11 a.m. to 10 p.m. Saturday; and noon to 7 p.m. Sunday.
